Keto Crawfish Boil Recipe
Serves 6. Cook time: 40 to 45 minutes
- 18 Pounds of Live Crawfish or 6 pounds of fresh or frozen tails
- 2 Pounds of Andouille Sausage
- 2 Pounds of Whole White Mushrooms
- 2 Yellow Onion Quartered
- Season to taste with Zatarain’s Seasoning
Three or four pounds of live crawfish or one pound of frozen tails is a standard per person serving. Most of the meat is in the tails, this is why you need fewer pounds of tails.
Generally, you want to let the crawfish boil for about fifteen minutes, then turn off the cooker and let them continue to cook in hot water for another ten to fifteen minutes.
Traditional Recipe
If you are planning a Crawfish Boil and you want to use live crawfish, there are two things you want to keep in mind. First, there is a season for harvesting crawfish, also called crayfish or crawdads in some areas. So make sure that live Crawfish is available when planning your event. For example, in Louisiana and Texas, Crawfish Season usually runs from December through July.

Second, ensure that all your Crawfish are alive as they go into your cooker. Therefore, it is essential to cook only live Crawfish.
Crawfish Boil Recipe Louisiana Style
We recommend using Zatarain’s seasoning instead of Old Bay since Zatarian’s is more of a Louisiana or Cajun spice blend. Also, Andouille sausage should be used and not smoked sausage or Kielbasa, which are generally used in traditional shrimp boils. The reason crawfish boils are so closely associated with Louisiana and Texas is that most of the commercial harvesting takes place there.
