Shrimp and Grits Recipe

A true Southern classic, Shrimp and Grits, is delicious and easy to make. There are two steps to making our recipe for shrimp and grits. The first step is making the grits and the second is sauteing the shrimp.
This dish is perfect for breakfast, lunch, or dinner.
Shrimp and Grits Recipe
Recipe Serves 2 or 3. Cook time: Fifteen to Twenty minutes.
Cooking the Grits
Bring four cups of water to a rolling boil. Before adding any ingredients, beginning stirring the water with a whisk or spoon. While still stirring, add half a tablespoon of salt and half a teaspoon of black pepper.
Next, continue stirring and slowly add one cup of instant or quick grits. Stirring while adding the ingredients will ensure that the grits will not be lumpy.
After adding the grits, salt, and black pepper, briefly bring the water back to a boil. Now let the grits simmer on low for five minutes. Then add one and a half cups of shredded cheddar cheese and two tablespoons of butter. Mix well with a spoon. It will be easier at this point to mix with a spoon than with a whisk. Let the grits stand while the shrimp are being sauteed.
Our recipe uses Quaker or Jim Dandy, but you can use your preferred grits. The cooking instructions and time might be different.
Sauteing The Shrimp

Coat your sauté pan with Olive Oil. Warm up the Olive Oil on a setting of 3 until your pan is hot enough for sauteing. Add two tablespoons of minced garlic, a half tablespoon of crushed red pepper, and two tablespoons of sliced green onions with scallions(the green part of the onion). Add two or three dozen peeled shrimp and sauté for about three or four minutes.
Place the grits in a bowl and top with the sauteed shrimp. Use freshly chopped parsley to garnish.
